His wood-carved commissions have been created for I.B.M., I.T.T., Wallace Labs., Pellon Corp., and numerous private collections. Marjorie E. Belvin comments in her book, Design Through Discovery, "Kaplan is among the most imaginative of contemporary artists working in wood."
These works moved Stan's practice off the flat surface and into physical space — large-scale commissions, constructions, intimate carved objects.

Mike Manuche's Restaurant Mural
Manuche's was a well-known New York sports bar and supper club in the early 1960s — celebrity clientele, lively atmosphere, a fixture of the era alongside places like Toots Shor's and the 21 Club.
The football theme began with a 1960 commission from Mike Manuche — one large mural and several smaller wood-carved panels for Manuche's Restaurant in New York City. The subject was the 1958 NFL Championship Game between the Baltimore Colts and the New York Giants, famously known as "The Greatest Game Ever Played." The research and sketches for these murals didn't end there — they became the foundation for a body of prints that kept evolving over the years.
